Todo empieza con la preparación del nixtamal (maíz pelado por dejarlo en agua con cal hervido). La olla que se usa para preparar el nixtamal se llama nexko:mit. El maíz blanco y el amarillo pueden dejarse un poco más en la lumbre que el maíz morado. Se procura no dejar este maíz morado mucho en el nexko:mit porque es un maíz muy blando y si se pasa de lumbre las tortillas salen muy duras. En los varios tipos de maíz que se prepara recomienda echarle agua de cal no muy espesa ni muy aguada para que el nixtamal salga bien y las tortillas salgan blanditas y esponjadas. De lo contrario salen amarillas por el exceso de cal. También recomienda que para que la masa no se desmorone, al lavar el nixtamal hay que no restregarlo mucho con las manos.
